Just around the corner is an adorable coffee shop. My daughter goes there with her friends after school to their homework. I love the coziness of neighborhood coffee shops. Its a great way to treat yourself to something sweet and savory, while supporting the community. My favorite drink is hot chocolate, which is perfect during this cold drizzly weather. So, this weekend I will head out to my local coffee shop just around the corner.

Much of today's beautiful Native American jewelry comes from Southwestern tribes like the Navajo, Zuni and Pueblos. Today we met the family for lunch for my niece Alyssa's birthday. We were in Austin, Tx, which was great because my son is a student at the University of Texas so I go to see him. We ate at a hip pizza place on South Congress Avenue and then we walked to a cupcake trailer for dessert. The weather was cold, even to the point that it snowed for a few minutes. We had a very fun time with family; my mother, sisters, nieces and nephew. It is always blast when we get together. Good food, good company, good memories.

I'm changing things one step at a time. I love the opportunity God gives us to revamp our self.

I'm eating smaller portions and healthier foods. I don't mind the portion sizes being smaller but I sure do get hungry a lot quicker now. I'm eating every 2-3 hours now. I wish I had a personal chef to cook for me all day long. I would have the chef make delicious and healthy foods.

I'm eating a diet that is low in fat and cholesterol. I'm eating a lot of fruits and vegetables. I've even given up burgers, french fries, and diet soads. I think I'm most amazed at the fact that I don't miss them. I'm actually satisfied eating a hand-full of grapes with my meal. It gives me a crispy crunch. I'm also enjoying mini-carrots. I bought them in small individual packages so I can carry them with me.

My heart is filled with happiness when I think about my children. Here are pictures of my daughter this past week, as she was accepted into National Honor Society at her high school. As you can see, the bond between sister and brother is forever strong. They are best friends and each other's support. Note...he was the one who bought her the beautiful bouquet of flowers.

Both of my kids are such a wonderful blessing from God and it is such a huge honor to be their mother. God has been with us all along, during the hard times as a single-mother, to the great times such as seeing my son go to a great college. We are truly blessed. I am very in-love with God and will be forever devoted to him. Thank you Lord for my trials, for it there where I learned the most. Thank you Lord for my kids, they taught me love and laughter. Thank you for my supportive extended family who prays for us and cheers us on. Thank you Lord for your Love, oh so unconditional and everlasting.

What would you say in a love letter if was the most important thing you would ever write? How do you put in words how much they mean? There are so many emotions of the heart and memories to be able to express them all. Who would it written to? Would you start with a higher power, and for me is my loving God who sent his son Jesus Christ to save me with his life. Would you include family, friends, how about pets? Writing a love letter should be honest, kind, and direct. It should leave the reader knowing they are loved and appreciated.

What if you wrote a love letter to yourself? What would it say? What would you want to hear? We think of writing love letters to others but don't really think of writing one to yourself. Maybe for today we can think of writing a love letter to yourself. Fill it with words of admiration, kindness, love, and support. Give it to yourself with open arms and a warm heart. Read it with joy and knowledge that you are loved.

I'm so proud of myself because this time I'm more disciplined about getting healthier. There are so many good things to believe in. I know that God has given me the will power to beat the weight that has weighed me down for so long in my life. I have great friends and family who are supportive and help me keep accountable. They believe in me and I don't want to let them down. I've started this new healthy lifestyle with the guidance of a physician. It important to me that I do this in a healthy and safe manner. I'm taking it one day at a time and making choices consciously every step of the way. I want to be around to see my children graduate from college and someday have kids of their own. I dream of traveling and enjoying my life. I didn't get here overnight so it's going to be a long road, but a one worth every step.

Read the recipe in its entirety before beginning. Make sure you have all of the ingredients and utensils and make sure that you understand all of the directions. Many mistakes have been made skipping steps.
Cold ingredients are essential to making a great pie crust It even helps to have cold bowls and utensils. . In addition, be sure to chill the dough for at least an hour before rolling it out. Keeping the shortening cold ensures a nice flaky crust!!
Don't overwork or overhandle the dough. Your shortening/butter should be coated with flour mixture, not blended with it. Over-processing causes gluten to form, a substance that toughens the dough. It's even a good idea to have cold hands before handling.
Carefully transfer the dough into your Emile Henry pie dish (the "Official Pie Dish" of the American Pie Council). Fit the dough into the dish (avoid stretching). Trim the dough to 1" inch over hang and tuck it under itself to create a thick rim.
With the index finger on one hand, press the dough against the thumb and forefinger of the opposite hand; continue around the perimeter of the crust and dish following the natural flute of the Emile Henry pie dish.
To ensure that your bottom crust is finished, bake pie in the lower third of the oven. You may have to cover the edges with foil or a crust protector to avoid overbrowning the edges.
Make sure that all of your ingredients are really fresh. Try making fruit pies when the fruits are in season to ensure a wonderful pie.

I need to dig through my old photo albums so I can find pictures of my daughter Gina wearing her watermelon dresses. The pictures must have been take over 10 years ago. She had 2 watermelon dresses, one in pink and the other in red, and both came with matching bloomer shorts. She looked so pretty in them. I only have 1 daughter, so dressing her up was so much fun when she was younger. But I have to admit that its so much fun shopping with her now that shes a teenager. Gina has always been the little princess. She has been having her toe nails professionally painted since 6th grade. She is a girly-girl who loves colorful nail polish and cuties designs. Today I am going to slow down to celebrate the magic of parenting and the blessings of having a beautiful daughter. I love my little princess girl Gina.

This is me wearing my every day prescription glasses. They are gorgeous pair of rimless frames with progressive lenses that l got at Weslaco Vision Source which is owned by my sister Jessica and her husband "Dr R". Jessica has an eye for fashion when it comes to selecting the eye wear designers for their practice. When I go to their optometrist office, I'm like a kid in the candy store. I want red frames. sunglasses, contacts lenses, rimless, bold frames....etc. The glasses I'm currently wearing are very light weight. They are rimless so they blend well and go with anything I wear. This is the second time I have chosen this style of glasses. I desperately need a new pair but first comes the eye exam. I'm near-sighted and I can tell that my vision has changed. Next, I can finally choose the frames. The big question is do I stay with the same style or do I chose a new one? I like the the Monika Schnarre Eyewear Collection below. I'm definitely going to need Jessica's stylish expertise to help me select the right one.

Awe, I love this style savvy outfit for my daughter. She is in 11th grade and is having to attend more events and parties. This outfit would be adorable on her. Gina usually wears jeans and shorts most of the time. When she dresses-up she looks so pretty and confident. This outfit would be so nice for a fun day with friends or out with family for dinner. The green cardigan sweater is gorgeous and looks absolutely cozy. I also love the red satchel bag because its big enough for everything she carries in her purse; wallet, iPhone, iPad, make-up, car keys, and who know whatelse she has. The skirt and leggings are something she would be very comfortable in wearing. The entire outfit is stunning and Gina will look adorable in this style. Its time again to take her shopping.

Today, this is the question Jesus asks you. The way you answer will determine how you choose to live your life, and what kind of meaning your life will have for you.

When I thought about this question, it finally occurred to me that I already had what I was looking for. I long to be loved and accepted by God,, to be guided by his wisdom and to share his love with others. But since God is already within all of us, he is fulfilling this longing now, for where God is, there is his love, his wisdom and the power to love others. So I am looking for God's help to realize more deeply what I already have. This realization will bring greater meaning to my life, but it isn't likely to happen without a lot of quiet, reflective prayer.

Seven Seconds to Make a First Impression

You meet a business acquaintance for the first time – it could be your new boss, a recent addition to your team, or a potential client you want to sign up. The moment that stranger sees you, his or her brain makes a thousand computations: Are you someone to approach or to avoid? Are you friend or foe? Do you have status and authority? Are you trustworthy, competent, likeable, confident? And these computations are made at lightning speed. Researchers from NYU found that we make eleven major decisions about one another in the first seven seconds of meeting.

In business interactions, first impressions are crucial. While you can’t stop people from making snap decisions – the human brain is hardwired in this way as a prehistoric survival mechanism – you can understand how to make those decisions work in your favor. First impressions are more heavily influenced by nonverbal cues than verbal cues. In fact, studies have found that nonverbal cues have over four times the impact on the impression you make than anything you say.

Here are seven nonverbal ways to make a positive first impression:

1. Adjust your attitude. People pick up your attitude instantly. Before you turn to greet someone, or enter the boardroom, or step onstage to make a presentation, think about the situation and make a conscious choice about the attitude you want to embody.

2. Straighten your posture. Status and power are nonverbally conveyed by height and space. Standing tall, pulling your shoulders back, and holding your head straight are all signals of confidence and competence.

3. Smile. A smile is an invitation, a sign of welcome. It says, “I’m friendly and approachable.”

4. Make eye contact. Looking at someone’s eyes transmits energy and indicates interest and openness. (To improve your eye contact, make a practice of noticing the eye color of everyone you meet.)

5. Raise your eyebrows. Open your eyes slightly more than normal to simulate the “eyebrow flash” that is the universal signal of recognition and acknowledgement.

6. Shake hands. This is the quickest way to establish rapport. It’s also the most effective. Research shows it takes an average of three hours of continuous interaction to develop the same level of rapport that you can get with a single handshake.

7. Lean in slightly. Leaning forward shows you’re engaged and interested. But be respectful of the other person’s space. That means, in most business situations, staying about two feet away.

Every encounter, from conferences to meetings to training sessions to business lunches, presents an opportunity to meet people, network, and expand your professional contacts by making a positive first impression. You’ve got just seven seconds – but if you handle it well, seven seconds are all you need!

I can't wait for the new show on ABC called "The Revolution". I like when there are several host experts giving advise for living a better lifestyle. I also love Ty Pennington, he is so adorable. I watched a clip from ABC Good Morning America, where Dr. Tiffanie Davis Henry was talking about weight points of view. She has so an energetic personality. I know I'm going to enjoy watching her. Tips for living a well balanced life:

1. Take care of and nurture yourself. You cannot accomplish anything if you're unhealthy. Get plenty of rest, exercise and eat properly. Many people think they can burn the candle at both ends, eat junk food, get very little exercise, and still function adequately. You may be able to get away with this for a while if you're quite young, however, at some point this type of life style will catch up with the best of us. Burnout is a real possibility. You may want to set aside time each day for an activity that you enjoy, such as walking, working out or listening to music. Or, allow yourself to unwind after a hectic day by reading, meditating or taking a nice hot bath.

2. Know what your priorities are. Balance doesn't mean do everything you can. Examine your values and decide what's important to you, then set your boundaries. You may be in the process of building a career, starting a family or going to school. Depending on what stage you're at in your life, your focus and energies will be different. Try not to become overwhelmed by juggling too many big projects in your life at once. Maybe planning a wedding is not a good idea when you're studying for the bar exam. Nor, is starting a family when you are unsure about your career direction, or relationship status. Not knowing what you want and trying to do everything at once can be a recipe for disaster instead of the road to leading a well balanced life. Try not to bite off more than you can chew.

3. Create an efficient mindset. Be organized and plan ahead. Take time at the beginning of each week to assess what needs to be done. Make a to-do list in a planner or calendar for upcoming appointments, exams to write or study for, or meetings to attend. Be sure to assign recreation and quality time for yourself and your family as well. Taking time to connect with family and friends will recharge your batteries and make you more efficient in the long run.

4. Expect the unexpected. Rather than get stressed and upset, allow yourself to roll with the punches when something you have no control over happens. You may get stuck in traffic, your computer could crash or your child could get sick with the chickenpox. Stuff happens. We've all experienced the unexpected. If you accept that anything can happen at any time, it's less likely it throw you off your stride when it does. Be able to adjust your game plan. Note also, that there are times when achieving balance may not be possible. For instance, you may have a family or career crisis that needs your immediate and undivided attention. It may require an exceptional amount of your time and resources. When that happens, do whatever it takes and when things go back to normal take time to refresh and rejuvenate yourself.

5. Maintain a positive mental attitude. Begin each day with the intention of making the best and most of it. It may not always go as planned, but it can go more smoothly if you put it in perspective. Part of living a well-balanced life is learning how to deal with adversity, unforeseen events and uncertainty. If you practice not letting things get to you, you will not only learn to live a well balanced and less stressful life, you will learn to live in and savor the moment. Once you've done everything you can within your control, let your life unfold. Be prepared for the future, but don't worry about it. While we can't anticipate and plan for everything in our lives, we can decide how, where and when to concentrate our energies. This may require some critical thinking and problem solving, but in the end it will lead to much less stress and a well balanced life.

A well balanced life is essential for personal effectiveness, peace of mind and living well. Whether we work, go to school, are retired or not, we all have responsibilities. There is always someone, or something, to answer to. There are things we want to do and things we must do. The challenge is to balance what we must do with what we enjoy and want to do. Its a beautiful morning in hill country Texas. I'm going to head out to the flea market in a few minutes. My Aunt Connie used to say, "You never know what you're going to find". Her words still loud in my heart, even though she is gone. We both loved walking around at flea markets, sorting through bins of nick-nacks. Before she passed away she told me that "Life Goes On". So here I am, making every effort to live my life without my best friend, my aunt. I have faith in God that he has beautiful things for me to see and enjoy.

My mother is at Disney World. I'm so thrilled that she was able to join my sister and her family on the trip. All the grand kids know her as "Grandma Bennie". She is an amazing mother and awesome grandmother. My mother is not your typical stay at home grandmother with nothing to do. She is always on the go visiting friends all over the country. I'm so proud of my mother because she has made it so far from the migrant fields that she worked at as a kid. Everyone know "Ms. Bennie" as a giving and loving woman. She is an angel sent from heaven to show us the beauty of Jesus Christ. She lives by her strong Catholic values and she is a proud American who taught us to be self supporting. My mother deserves all the happiness in the world and Disney is a great place for that.

Living a whole life to me means being able to find a balance between spirituality, healthy, and community. It is trying to make life happy for myself and my family. My main focus has to be to get out more often to enjoy the fresh air and gorgeous scenery, and allow the whispers of God to be heard.

Happiness is a choice, one you can make today and every day. Surrender your need to control and let yourself be amazed. You can't grow without pushing your limits, so walking forward in confidence. Real awareness isn't about hanging on to the moment, but simply recognizing it's there. Resist the urge to over analyze every experience. Live each moment instead. Open your heart to receiving, as well as to giving. Kindness is in our nature; practice giving and receiving it freely.

What to do with the annual poinsettia plants we get every Christmas? I feel so bad letting it whither away or throwing it in the trash. I certainly don't have a green-thumb, so hope of it lasting until next Christmas will be a challenge. I also don't want to "nurse" a plant all year long, just to get disappointed if it doesn't survive. If I'm going to be successful at keeping it year-round, I'm going to need simple instructions. How to Keep a Poinsettia Going after Christmas

1 Continue to water your poinsettia, keeping the soil moist, but not wet, at all times. Keep the plant away from drafts caused by opening doors or heater vents.

2 Set the poinsettia outdoors once night temperatures average 55 degrees F or above.

3 Transplant the poinsettia into a larger pot. Use fast-draining potting soil rich in organic matter.

4 Cut the poinsettia back to about 8 inches in height in late March or early April. By the end of May you should see vigorous new growth.

5 Prune during the summer to keep the plant bushy and compact. Do not prune after September 1.

6 Keep the plant in indirect light or filtered sun.

7 Fertilize every 2 to 3 weeks with a complete fertilizer.

8 Move the plant into a closet each night, starting in October, for 14 hours, making sure it receives no light at all; move it into the light each morning for a maximum of 10 hours. Poinsettias bloom only when they experience long nights.

9 Continue this procedure every day for 10 weeks and you can have poinsettia blossoms for next Christmas.

I pray that as my children find their own life away from home, that I may be a mother that protects them through prayer. Dearest Mother of God, you have been with me even before my children were born. You heard my prayers as a single mother, and you called upon angels to guide me through motherhood. Ingredients

10 tbsp. unsalted butter, at room temperature, plus more for the pan

1 cup plus 2 tbsp. cake flour, sifted, plus more for the pan

1 1/3 cups Lyle's golden syrup, Steen's cane syrup, or dark corn syrup

1/4 cup packed dark brown sugar

1 1/2 tbsp. orange marmalade

2/3 cup milk

2 eggs

1 cup whole wheat flour

1 1/2 tsp. baking powder

1 tsp. ground cinnamon

1 tsp. ground ginger

1/2 tsp. baking soda

1/4 tsp. kosher salt

3 tbsp. sugar

2 tbsp. fresh lemon juice

Confectioners' sugar, for garnish

Directions

1. Heat oven to 325°. Grease bottom and sides of an 8" x 8" metal baking pan with butter and line bottom of pan with parchment paper. Grease parchment paper with butter and dust paper and sides of pan with a little cake flour. Heat 8 tbsp. butter, golden syrup, brown sugar, and marmalade in a 2-qt. saucepan over medium-high heat. Cook, stirring often, until syrup thins and sugar dissolves, about 5 minutes; let cool for 10 minutes. Whisk in the milk and eggs; set syrup mixture aside.

2. In a large bowl, whisk together cake flour, whole wheat flour, baking powder, cinnamon, ginger, baking soda, and salt. Add reserved syrup mixture and whisk until just combined. Pour batter into reserved baking pan. Bake until a toothpick inserted into center of cake comes out clean, about 50 minutes.

3. Transfer cake to a rack and let cool for 10 minutes. Meanwhile, heat remaining butter along with sugar and lemon juice in a 1-qt. saucepan over medium heat and cook, stirring often, until sugar dissolves, about 3 minutes. Using a pastry brush, brush half the lemon syrup over top of cake. Invert cake onto cooling rack, discard parchment, and brush the remaining lemon syrup on bottom and sides of cake. Invert the cake onto a serving stand and wrap in plastic wrap; let cool completely. The cake tastes better the day after baking and will keep for up to 4 days. To serve, cut cake into squares and sprinkle with confectioners' sugar.

I am having such a fun time this holiday season with my children. My son is home from college. He has been extremely helpful running errands and spending a lot of family time together. We have shared home cooked family dinners and done some Christmas shopping. He helped me several days to prepare for our Christmas party. The day of the party he was so sweet in helping us decorate the event center and when the doors finally opened, he was with me at the front table to greet the guests. The Neuschwanstein Castle is one of the most visited castles in Germany and one of the most popular tourist destination in Europe. The castle is located in Bavaria, near the town of Fussen. It was built by King Ludwig II of Bavaria, also known as the “Fairytale King”. The Neuschwanstein Castle really looks like a fairytale castle. Neuschwanstein is a castle of the paradox. It was built in the 19th century in Bavaria, in a time when castles no longer had strategical and defensive purposes. While Neuschwanstein's look is that of a medieval castle, it was equiped inside with state of the art technology at that time. For example on every floor of the castle there were toilets with automatic flushing system, as well as an air heating system for the whole castle. Water was supplied by a nearby spring situated at only 200 meters above the castle.

Neuschwanstein's positioning is also a fairytale one. It is located in the Alps in Bavaria, Germany, in a magnificent landscape, on the top of a hill. Neuschwanstein overlooks the Hohenschwangau valley. If you come to visit this castle, you will be amazed by the extremely beautiful landscape that surrounds it. Also, Neuschwanstein lies very close to the town of Fussen, which is also a popular tourist destination in Germany. The construction of the Neuschwanstein castle began in 1869, and originally it was projected to last three year. But Ludwig II wanted the castle to be perfect, so the immense building was not finished even at Ludwig's death in 1886.

Neuschwanstein Castle has a very beautiful inner garden surrounded by a walled courtyard. It even has an artificial cave. Neuschwanstein's interior is as beautiful as its outside. Though only 14 rooms were finished before Ludiwg II's sudden death in 1886, these rooms were majestically decorated. The two story throne room was designed in Byzantine style, with wall paintings depicting angels. Ironically, there is no throne in the Throne Room, as Ludwig died before it was completely finished. This fairytale look of the Neuschwanstein castle inspired Walt Disney to create the Magic Kingdom. Today, Neuschwanstein is the most visited castle in Germany, and one of the most popular tourist destination in the world. Every year over 1.300.000 people crosses its gate.

Being raised in south Texas gave me so much motivation and love for family. The values that my parents taught us are still with me as I have raised my children. The bountiful gatherings of family and friends reminds me that we are meant to love thy neighbor. Being raised in a Hispanic culture taught me to accept differences and live with a love and appreciation for the country we live in. There were times my parents worked long hours when I was a kid, just to keep food on the table. Times were tough but no one knew we were poor. We all felt rich in love and laughter. My siblings were my best friends growing up, and they still are. Going to church every Sunday kept us in the light of a great power than our self, an all mighty and loving God. When couples go married, children were born, or someone passed away, everyone in the community came by. We all celebrated like family and we all mourned for those who left too early. Keeping our word was more valuable than a dollar and respect for elders was expected. We slept with our windows opened to allow the cool autumn night breeze to put us to sleep. There was no HBO, MTV, or Ipad. We looked directly into the heavens to see the real stars. No one had cellphones yet we knew more about someones heart than we do now. Dreams were wholesome, not like those in some senseless reality show. People got up early to go work or filled in with side jobs. Being lazy and entitled had no place in God's world. We all had something to contribute to society and we were expected to do so. We took care of our own elderly and sick. People didn't pass the burden to someone else or to the government. We ate because we worked. We studied because it was a privilege. We loved because cared. I hope this Thanksgiving holiday finds you with family and friends. May the love of Christ be with you.

When I got home last night there were 4 cute doe in my backyard. At first they were laying down just relaxing in the cool evening breeze of Texas Hill Country. They looked so adorable. I decided to get my camera to take pictures of them. They weren't too happy about that. They weren't aggressive but they were looking for a way out. Like reindeer during Christmas, one doe too a huge leap over the fence. He broke part the top of fence lumber plank. I sure hope he is doing okay and didn't get hurt. I took a few more pictures of the last 3 doe and decided to leave them alone to enjoy the rest of the evening.

I often say that I live in Hallmark USA because I'm blessed with such pretty scenery. This is definitely God's country.

The fideo is a type of noodle, popular in Mexican and Latin American cuisine, often referred to by speakers of English as "vermicelli." It is commonly used in chicken soup and in our house we call it the "one-dish wonder". I was so happy this week because my daughter suprised me by making supper for me. Jigsaw puzzles are said to help increase our mental power as well as concentration, memory and sharpness. I personally think they are just fun and relaxing. Its a time that I don't have to think about things, plan meetings, or worry about my kids. I have good memories of making puzzles with my family.

Perfect Pecan Pie

Pecan pie is the perfect touch at the holiday dinner table because it's deliciously decadent. Homemade crust and copious amounts of dark corn syrup give this traditional pecan pie a leg up on the competition. Brown sugar and maple syrup drenched pecans are the sweet and sticky filling for this perfect holiday pie. Pecan pie is my favorite dessert. I like it served warm with a scoop of vanilla ice cream.

Ingredients

• 3/4 cup(s) dark corn syrup

• 1/2 cup(s) dark brown sugar• 3 tablespoon(s) butter or margarine, melted

• 1 teaspoon(s) vanilla extract

• 1 pinch(s) salt

• 3 large eggs

• 1 1/2 cup(s) pecan halves, toasted
• 1 9-Inch Baked Pie Shell

Directions

• Prepare 9-Inch Baked Pie Shell as recipe directs.

• Cool pie shell on wire rack at least 10 minutes.

• Reset oven control to 350 degrees.

• In large bowl, with wire whisk, mix corn syrup, sugar, butter, vanilla, salt, and eggs until blended.

• Stir in pecans with spoon until well blended in.

• Pour filling into pie shell.

• Bake 43 to 45 minutes or until filling is set around edge but center jiggles slightly.

• Cool on wire rack at least 3 hours for easier slicing.

• Refrigerate leftovers up to 1 week.

I have to admit that I have never baked a pecan pie myself. If you can get a homemade pie, you're in luck. I also would highly recommend it. Another great place for pies is Cracker Barrel. They are delicious!!

One of the things I like the most about living in central Texas is that there are so many antique boutiques and thrift shops. Collectible and Antique selection, fancifuls and practicals. I feel like I'm walking back in time to an era where people lived by their courage and stood by their character. The shops are filled with yesterday's memories for today's lifestyles. Many shops sells a wide range of antiques from the Victorian and Edwardian periods. One of my favorites is the mix French Antique and Texas Vintage. Cote de Texas is a gorgeous blog of French designs on the Texas Coast. This blog is filled with incredible interior designs.

I'm so blessed to have so many wonderful shops in my neighborhood. They specializes in making uncommon furniture and shabby chic presents, garden decor, decorative rustic country accessories and French country and Paris apartment decorating items. Birdhouses, benches, shelves, signs and unique drawer boxes are among the finest selling items. Texas vintage goes with any living style from a cottage to a loft. I adore the pieces below in rustic green color. Wish I could take them all home. I'm just green with envy!!

I have a huge stack of magazines in my living room. I buy them when I find great deals on yearly subscriptions. I really do read and browse through them. Most of my magazines are about women's interests, home decor, craft projects, cooking, spiritual, and fashion. Looking at hard copy magazines is different from looking at them online. Yet I have to admit I like online magazines too. I spend so much time at the computer all day that I like to get on my comfy sofa to read. For the longest time I have kept "Dream Journals" which I fill with inspiration pictures and quotes from magazines. Call me old-fashion, but I like print magazines.

Hot chili has long been a favorite of cattlemen and cowboys on cold winter nights for its satisfying bite. This recipe combines bacon and beef with navy and red beans, tomatoes, onions, and the perfect pinch of chili powder. Serve with a side of cornbread and a generous topping of shredded cheese and fresh cilantro for a delicious flavor twist your family will love.

Ingredients4 slices bacon3 lb. beef stew meat1 large onion, sliced 1/2-inch thick4 cloves garlic, minced2 28-oz. cans whole tomatoes1 15.5-oz can navy beans, rinsed and drained1 15.5-oz. can red beans, rinsed and drained2 to 3 Tbsp. chili powder2 Tbsp. red wine vinegarShredded cheddar cheeseSnipped fresh oreganoCooked bacon, crumbled Directions

In 4- to 6-quart Dutch oven cook bacon and beef, half at a time, over medium heat until beef is browned. Drain fat. Return meat to pan. Reduce heat; add onions and half of garlic. Cook and stir until onion is tender.
Add undrained tomatoes, beans, and 1 tablespoon of the chili powder. Bring to boiling; reduce heat. Simmer, covered, for 1 hour, stirring occasionally. Stir in remaining garlic, chili powder, and vinegar. Cook, covered, 1 hour. Add water to desired consistency. Season to taste. Top servings with cheese, oregano, and crumbled bacon. Makes 6 servings.

Serve this chili with brown rice and/or a side of corn bread or savory corn muffins. While the chili is great the way it is, you can also experiment with different spices to give it some flair. Top individual bowls off with shredded cheddar cheese and sour cream.

Pepita (from Mexican Spahish: pepita de calabaza, "little seed of squash") is a Spanish culinary term for the pumpkin seed, the edible seed of a pumpkin or squash. The seeds are typically rather flat and oval with a light green in color inside a white hull. The word can refer either to the hulled kernel or unhulled whole seed, and most commonly refers to the roasted end product. The pressed oil of the roasted seeds of a specific pumpkin variety is also used in Central and Easter European cuisine. Pepitas are a popular ingredient in Mexican cusines and are also roasted and served as a snack. Marinated and roasted, they are an autumn seasonal favorite and commercially produced and distributed packaged snack like sunflower seeds. It is very common to find Pepitas being sold along the streets of Mexican plaza.

Perfect for snack time, roasting your own pumpkin seeds is simple, tasty and fun. Here are a few options for spicing up these crunchy goodies, or feel free to make your own spice combinations.

Ingredients

1 medium pumpkin
4 cups water
1 tablespoon extra virgin olive oil

Method

Preheat oven to 250°F. Cut off top 3 to 4 inches of pumpkin then scoop out seeds onto a clean work surface. Discard stringy fiber from seeds along with any seeds that are split or cracked then transfer to a strainer and rinse well. (You should have about 2 cups of seeds.)
In a medium pot, bring water to a boil. Add seeds, reduce heat and boil gently for 10 minutes. Drain well then transfer to a paper towel-lined sheet tray and pat dry.
Transfer seeds to a medium bowl, toss with oil and spread out in a single layer on a large baking sheet. Roast seeds, stirring every 10 minutes or so, until just crisp and golden brown, about 1 hour total. (They will become crispier as they cool.) Set aside to let cool completely then shell or eat whole.
For spicy pumpkin seeds, mix 1/2 teaspoon each garlic salt, cumin, coriander and cardamom with seeds and oil before roasting.  For sweet pumpkin seeds, mix 1 teaspoon each ground cinnamon, cloves and ginger and 1 1/2 tablespoons dark brown sugar with seeds and oil before roasting

We all love a well dressed man. How about these stunning fall fashions by Territory Ahead? I've been a single-mom for many years but I still can remember how much fun I had shopping with my ex-husband. I found many good deals at Stein Mart too. I loved shopping for fall clothes. I have always liked the rugged look, I guess it's the Texas girl in me.

For starters, you can't beat the perfect pair of jean. You're man will love you for it. They usualy prefer casual instead of dressy slacks. Jeans are built to last and have the most comfortable fit. While denim jeans are great for wilderness camping, these pants are perfect for credit-card camping - you know, the kind of campsites with king beds and wine lists.

Shirts and t-shirts are a must have. Look for the iconic rock tower's palette of piñon, sandstone and red rock meets a traditional design. Perfect for riding the range, hanging-out at the lodge, and dining out. Men's shirts don't always have to be rugged. How about a carefully built soft, easy-draping blend of silk and cotton. Wear layers for color contrast by putting a crewneck or V-neck shirt underneath.

For the fall, you must have sports coats and leather jackets. ry a top-dyed, rigorously dry-drummed lambskin that has an aged worn look. For a casual look go for a bomber-style jacket that is built of premium goat leather. Comfort jackets to wear around the ranch or log cabin come in so many different styles and colors. Go with a subtly brushed, cotton-nylon shell is treated with resin for wind and moisture resistance. They are burly, practical, utilitarian, refreshingly unaffected.

Most important, remember that it is the man who makes the clothes, not the clothes who makes the man. Shower your man with love, compliments, and gifts.

Those of you who love Blood Oranges don't need to be told how exquisitely wonderful they are. In the kingdom of citrus, blood oranges are royalty. You know that every bite is an explosion of sweet, deep orange flavor, with hints of raspberry. If however, the marketing powers that be renamed the blood orange "Sangria Orange", then there would be no issue. Sangria comes from the word "sangre" which means "blood" in Spanish, but most English speakers don't know that; to most of us sangria is simply a red wine drink spiced with oranges. Instead of conjuring up images of some poor animal freshly slaughtered we would think happy thoughts of festive Sangria. We would imagine this orange to be the color of red wine, not blood.

This is my niece Alyssa. She is an amazing young woman who is weeks away from graduation at the University of Texas. She is also part owner of Handshakes, a gourmet milkshake trailer in the hippest part of the Austin, Texas. We are so proud of her and wish her the very best.

Handshakes, Austin’s newest edition to the trendy trailer community, opened Friday Oct. 7. The trailer is located in on East 6th Street in Austin in the back lot of Cheer Up Charlie’s! The menu includes a few not-your-average items like the Panshake (pancake shake) and The Texas Popper (jalapeno shake) and even has Vegan options. I personally LOVE the Chocolate shake. It comes with chocolate shavings on in the mix and a tasty light whipped cream. My son Vinny likes the Pancake with Syrup shake and my daughter Gina like the Cookies and Creme. Handshakes is truly an amazing concepts and the recipes will keep on coming. They are testing new recipes all the time.

Gruene, Texas is a gorgeous little town that is just 5 minutes from my house. I fell in love with Gruene many years ago and finally had my dream of living in the area. Two years ago my kids and I moved here, and I've never been happier. Here is a bit of information about Gruene. Arriving in Texas in the mid 1840s, German farmers became the first settlers of what is now known as Gruene, Texas. They built houses in various styles; a Victorian cottage (now Lone Star), a large brick home, and a frame house (now Gruene Haus) for the foreman of his farm. The first mercantile store (now Gruene General Store) was built in 1878 and a cotton gin (now Gristmill River Restaurant and Bar) powered by the Guadalupe River was added soon after. Further construction during this profitable time included a dance hall and saloon (Gruene Hall), which became the center of the community's social life. Gruene itself has been added to the National Register of Historic Places. Even with the remarkable growth of this once sleepy little town, the main focus of Gruene is, and continues to be, bona fide Texas.

Today was one of those days when I wish I could have stayed in bed longer. My bed felt so cozy, the room temperature was perfect, and I could have used some extra sleep time. But oh no... the alarm rang at 6am and up I had to go to work. I'm single so there isn't anyone next to me in bed that I could have bitched at, and yelling at myself is just too insane. So I got myself out of bed, showered, put on my comfy jeans and favorite shirt. I grabbed my keys and slung my purse over my shoulder. "Ugggh" I said, not knowing that all would soon change!!! As I stepped outside the house I felt the wonderful weather, cool and breezy. My outlook totally changed. Autumn weather finally arrived. I'm happy, smiling, and full of fresh ideas. I come alive during autumn. It is by far my favorite season. Waking up this morning was a grace from God.

Jack-o'-Lantern Tamale Bake Recipe

This recipe looks so fun and interesting. Authentic tamales are common in my "Tex-Mex" culture and a must have during the holidays. When I was young I remember my mother and aunts gathering in the kitchen to make tamales. It is a lot of work to make them but the fun is in spending time together during the long process. Cooking together can be a delicious learning experience for children and their parents. Kids can explore new foods, learn about nutrition, and develop math and reading skills as they measure and read directions. These simple guidelines are designed to help you make cooking safe and fun, and to entice your children into trying something new.

Recipe

Ingredients
1 1/4 lb lean ground beef
1 jar (16 oz) chunky salsa
1 can (7 oz) corn, drained
1 c an (2.25 oz) sliced black olives, drained
1 1/2 tsp chili powder
1 tsp salt
1/4 tsp pepper
1 cup (4 oz) shredded cheddar cheese
4 boxes (about 8.5 oz each) cornbread mix, plus ingredients prepare mix
Green bell pepper, scallions or chives, roasted red peppers, olive tapenade
Sour cream, chopped scallions or tomatoes, guacamole
You will need: Wilton Iridescent Jack-O-Lantern Pan

Preparation
1.   Heat oven to 400°F.
2. Coat pan with nonstick cooking spray.
3. In a large nonstick skillet, brown ground beef; drain.
4. Stir in salsa, corn, olives, chili powder, salt, and pepper.
5. Remove skillet from heat; stir in cheese. Keep filling hot.
6. Prepare two boxes cornbread mix according to directions.
7.   Spread batter on bottom of pan; spoon in filling to 1" from edge of pan.
8. Prepare remaining boxes of mix.
9.   Spread batter over filling making sure batter flows into edges of pan.
10. Bake 20 or until top crust is golden brown and firm to the touch.
11. Remove from oven to wire rack to cool 15 minutes.
12. If cornbread has baked over edge of pan, loosen edges from pan.
13. Place serving plate on top and turn over to release.
14. Cut bell pepper into stem, scallions into strips for hair, and roasted peppers
      into triangles for eyes and nose. Spread olive tapenade into mouth shape.
      Arrange on Tamale Bake.

Sweet Sopaipillas

The Sopaipilla, lightly fried dough with honey drizzled on top, is truly one of life's greatest simple pleasures. Common throughout the American Southwest, it is generally served as a dessert with honey poured between its two layers. I grew up in south Texas where sopaipillas were served at restaurants and filled the shelves at local bakeries. They are hollow squares of fried dough, dusted with sugar, and served with honey to pour in the hollow middle part. Every bite is sweet, and sticky, messy and incredible. You really want to serve immediately while still warm when the crispy layers are light and flaky. Sopaipillas are perfect for breakfast with fresh fruits or a light afternoon snack....yummy!

Recipe at Saveur

Ingredients
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 tablespoons shortening
2/3 cup water
Oil for frying
Cinnamon & sugar
or powdered sugar
Honey

Directions
Combine the dry ingredients and then cut in shortening until crumbly. Gradually add water, tossing with a fork until mixture holds together. On a lightly floured surface, knead dough for 1-2 minutes or until smooth. Cover and let stand for 5 minutes. Roll out to 1/4-in. thickness. Cut with a 2-1/2-in. star cookie cutter or into 2-1/2-in. triangles. In an electric skillet or deep fat fryer, heat oil to 375°. Fry sopaipillas for 1-2 minutes on each side or until golden brown and puffed. Drain on paper towels. Sprinkle with cinnamon and sugar or powdered sugar, and serve immediately with honey.

I'm so proud of the wonderful young lady she has become. Her courage gives me strength. Her laughter brings me joy. I'm blessed to be her mother and get to spend so much time with her before she leaves to college. I wish for her a life of happiness, peace, wisdom, and love.

This bracelet from Crows Nest Trading is a bit pricey for me but there's nothing wrong with dreaming. I love turquoise necklaces, rings, and bracelets. The Native American designs are a work of art and has to be the most beautiful turquoise jewelery I have ever seen. I love western wear and feel most comfortable when I'm wearing jeans. Denim can go from casual to classy in a snap with some jewelry. I wear my western sandals during the summer and my western boots in the winter. Ranch-wear is fun, flirty, and fabulous.

Autumn Memories

Every year I pull out this picture from the archives. Here are my adorable kids, my son Vinny was in middle school and Gina was in elementary. The picture was taken 7 years ago in the front yard of the house we used to live at before we relocated. I remember that day like it was yesterday. My son is now in college and my daughter in 11th grade. Time sure goes fast. I hope they will make their own Autumn Memories as they go through life.

I loved the autumn season in that home. We decorated the house in a harvest theme inside and out. There were harvest scented candles in every room, filling the air with aroma of pumpkin spice. For several years I bought my candles at WalMart and they lasted a long time because they were the large size ones. I also found seasonal candle collections at Cracker Barrel and local boutique shops. Though I paid a bit more, boutique candles are a wonderful treat. Glade air freshener plug-ins are also a wonderful way to fill the air with warm fall scents of cider, cinnamon, and pumpkin pie. They are safer than candles in bathrooms and kids rooms. It really doesn't take much to transform your house into a harvest home.

In my opinion, the best Christian Band ever!!!

With a reputation for performing some of Christian music’s most electrifying live shows, Third Day began like many bands do, by drumming up local support. They started up the band while in high school. After winning over crowds in its native Atlanta, Third Day eventually signed with Reunion Records and released its self-titled debut in 1996. Seamlessly transitioning between the pop, rock and worship genres, Offerings: A Worship Album followed in 2000. The band is currently on their "Make Your Move" tour continuing its collaborative spirit with fellow bands Tenth Avenue North and Revive.

Comprised of frontman Mac Powell, bassist Tai Anderson, guitarist Mark Lee and drummer David Carr. Third Day has now served up guitar-fueled anthems with a distinctly Southern flavor iinfluenced by the Southern rock of Lynyrd Skynyrd and other artists such as U2 and Rich Mullins.

Recorded for the band’s devoted fan base known as “Gomers,” the album was in response to the powerful praise & worship sets happening during Third Day’s concerts. Wellness Wishes

Tuesday morning is my wellness follow-up appointment with my doctor. I'm nervous because I know I haven't been taking care of my health as I should. Also the older I get the more I worry about a full range of health concerns that might be hereditary. I'm blessed with overall good health but the older we get the hard it is to lose weight. I really need to focus on total wellness; good health, fitness, nutrition, age-defying beauty, and spirituality.

A successful health plan includes ways how to address health concerns from physical, mental, and social. Healthy living must also include family, friends, and community involvement. Emotional health is most important to be able to make positive decisions and navigate through the ups and downs of life. Getting enough sleep will ensure the energy to balance work and play. Relationships are the flowers of life, enjoy a closeness with those around you. Enjoy a life of fitness through healthy dieting, exercising, and a regular vitamin regime. Pretty Pumpkin Tablecloth for Fall

Here is another project inspiration. I love tablecloth this because it has a rustic western look to it. I'm going to work on but use a darker beige fabric as a base. I might even go with a chocolate brown felt for the pumpkins. There are so many possibles. Can't wait to get started.

Sew Scary Cute Pumpkin Pincushions

This is such an adorable project. I've got so many scap fabrics and cute buttons. I'm going to put my spin on it and see what I come up with. Mushroom and Roasted Pepper Tarts

Ingredients

Chive Piecrust dough, Cooking spray, 1 tablespoon Dijon mustard, 1 cup boiling water, 1/2 cup dried porcini mushrooms (about 1/2 ounce), 1 tablespoon canola oil, 2 tablespoons chopped shallots, 4 ounces cremini mushrooms thinly sliced, 3 1/2 ounces shiitake mushroom caps thinly sliced, 1 garlic clove minced, 2 tablespoons Madeira wine, 1 teaspoon chopped fresh thyme, 1 tablespoon chopped fresh flat-leaf parsley, 1 teaspoon fresh lemon juice, 1 teaspoon freshly ground black pepper, 3/4 teaspoon kosher salt, 3 tablespoons grated Parmigiano-Reggiano cheese divided, 1/2 cup 2% reduced-fat evaporated milk, 2 tablespoons half-and-half, 1 large egg , 1 large egg white, 1/3 cup chopped bottled roasted red bell peppers, 2 tablespoons finely chopped fresh chives

Preparation

1. Preheat oven to 400°.
2. Divide Chive Piecrust dough into 5 equal portions. Place each portion between two sheets of plastic wrap; roll into a 6-inch circle. Remove top sheet of plastic wrap. Place each dough circle, plastic wrap side up, into a 4-inch round tart pan coated with cooking spray. Remove remaining plastic wrap. Press dough into bottom and up sides of pan; fold excess crust back in, and press. Pierce bottom and sides of dough lightly with a fork; freeze 10 minutes. Line bottoms of dough with foil; top with pie weights or dried beans. Bake at 400° for 25 minutes or until lightly browned. Cool on a wire rack 15 minutes; remove weights and foil. Brush crusts with mustard.
3. Reduce oven temperature to 375°.
4. Combine 1 cup boiling water and porcini mushrooms in a bowl; cover and let stand 20 minutes. Strain mixture through a sieve over a bowl, reserving mushrooms and 1/4 cup liquid. Finely chop mushrooms.
5. Heat oil in a large skillet over medium heat. Add shallots; cook 1 minute. Add cremini and shiitake mushrooms; cook 8 minutes, stirring occasionally. Add garlic; cook 1 minute, stirring occasionally. Stir in porcini mushrooms, wine, and thyme; cook 1 minute. Add reserved 1/4 cup soaking liquid, scraping pan to loosen browned bits. Reduce heat; cook 3 minutes. Stir in parsley, juice, pepper, and salt.
6. Divide mushroom mixture evenly among prepared crusts. Combine 2 tablespoons cheese and next 4 ingredients (through egg white), stirring with a whisk; divide mixture evenly among tarts. Sprinkle tops evenly with bell peppers and remaining cheese. Place tarts on a baking sheet. Bake at 375° for 35 minutes or until set. Cool on a wire rack 10 minutes. Sprinkle with chives.

When we moved a couple of years ago we had to leave "Snowball" behind with friends. Snowball was a living miracle. He survived complicated illnesses that were cured with medicine, prayer, and lots of love. I hope I have his spirit of courage and determination. I think dogs are the most amazing creatures; they give unconditional love. For me they are the role model for being alive. They protect, they love, they laugh with their wagging tails. How much more can we ask from? Oh how adorable they are! It is their world, we just live in it.

Maple Glazed Memories

Williams-Sonoma was one of our favorite stores. Aunt Connie and I would go there and wish we could take everything home with us. Now that she is gone, part of my heart is empty. She told me that "life goes on" so I am going to push myself to do the things we used to do together. This weekend I'm going to make this recipe. As the maple glazes the vegetable with nature's sweetness, so will the love of Aunt Connie glaze my heart with sweet memories.

Maple-Glazed Autumn Vegetables

Most often associated with breakfast and sweet dishes, maple syrup has a long and diverse culinary history. Native Americans taught colonists how to highlight savory foods with the sweetness of maple sugar. This technique works equally well with maple syrup, as you'll discover with these glazed autumn vegetables. Be sure to use pure maple syrup, which is graded according to quality and color. In general, lighter-colored syrups have a milder, more delicate flavor.

Ingredients:
6 Tbs. (3/4 stick) unsalted butter
1 lb. parsnips, peeled and cut into 1/2-inch chunks
1 butternut squash, peeled, seeded and cut into 1-inch chunks
1 acorn squash, peeled, seeded and cut into
1-inch chunks
1 Tbs. chopped fresh sage
1 tsp. chopped fresh thyme
1/4 cup maple syrup
Salt and freshly ground pepper, to taste
1 to 2 Tbs. chopped fresh flat-leaf parsley

Directions:
Set an electric skillet to 450°F and melt 4 Tbs. (1/2 stick) of the butter. Alternatively, melt the butter in a large fry pan over medium-high heat. Add the parsnips, butternut squash and acorn squash and stir to coat with the butter. Cover and cook until browned, about 5 minutes. Stir the vegetables and reduce the electric skillet to 400°F, or reduce the heat on the stove top to medium-low. Cover and cook, stirring occasionally, until the vegetables are tender, 10 to 15 minutes more. Add the sage, thyme, maple syrup and the remaining 2 Tbs. butter. Season with salt and pepper and stir to combine. Transfer to a warmed serving bowl, garnish with the parsley and serve immediately. Serves 10 to 12.

Congratulations to Kyle Chandler for winning the Primetime Emmy Award for Outstanding Lead Actor in a Drama Series in 2011. He plays Coach Eric Taylor in Friday Night Lights.

I'm in love with his southern charm and he is gorgeous!!! He’s country-casual in motorcycle boots and wrangler jeans. He was born in New York, raised in Georgia, lived in Los Angels, and now makes his home in Dripping Springs, Texas with his family. I still remember seeing him in 1990 in his first major role on television was as Army Sergeant William Griner a member of special operations squad fighting in Vietnam in the series Tour of Duty. He is now in the movie Super 8. He gets better with age.

Kyle spent 21 years living in L.A., but it never really suited him. He’s too self-effacing, too genuinely earnest — all “yes, ma’am” and “no, ma’am” in his easy Georgia drawl. “Everything moves a little quicker in Los Angeles,” he says. (He never calls it L.A.) “A lot of times you don’t know your next-door neighbor.” He’s much happier in Austin. They’ve got a 33-acre spread half an hour southwest of town, where he can busy himself with the horses and donkeys or survey the fence line on his big orange tractor, which Kathryn calls “his happy place.” He’s a volunteer fireman. He hangs out at the Seed & Feed. Sometimes he gets on his bike and just cruises the Hill Country. I also live in the Texas Hill Country, and hope one day I can see him at a local restaurant or feed store.

Good-bye Aunt Connie

With much sadness I would like to share with you that my Aunt Connie has passed away. For those who have been with me the past 18 months know that I have been blogging about her journey with cancer. Connie was more than my aunt, she was a best-friend. My job relocated me 2 years ago to a city near where she lived. It was a God thing. God knew what he was doing. I quickly called her and we started a journey of the heart. We came together as family should, during the good and the bad. We had fun times shopping and tough time through chemotherapy. On Saturday mornings we would head out to antique stores, flea markets, and tea cafes. We both liked the same things like cooking shows and consignment stores. She always told me "Life Goes On". Her words are now the driving force that gives me the motivation to continue my life in search of joy and serenity.

I ask for prayers for my family, especially my mother. Connie was her only sister and I know that mom will be hurting for a long time. I also want to thank God for giving me such wonderful women of wisdom, my mom and sisters. They served Connie with love and compassion, especially the last few weeks. They exemplified God's heart of love. Family and friends will miss Connie but she will never be forgotten. As for me, I promised Connie that life goes on. I will continue my life and carry her in my heart and memories.

Thank you to my friends at Spiritual Sunday for the love and prayer support through this journey. It has been my humbling honor to have received your support and well wishes that past year. You have been my angels from heaven. It doesn't matter that our friendship is through blogging and we haven't actually met in person. For God's love and the human spirit have no boundaries.

I'm so excited about The Pioneer Woman being on the Food Network. Her blog is amazing with so much information about home and garden, cooking, and her photography is stunning. Ree Drummond is a city girl turned rancher's wife turned food blogger turned Food Network host. Join her in the kitchen on her family's Oklahoma ranch. Her cooking show will air this fall on Food Network at 11:30 Eastern Time/10:30 Central time. It’s part of their fall lineup of Saturday morning cooking shows, and will feature lots of good grub. In addition to the food, though, there’ll also be glimpses into life on the ranch: the cattle, the horses, the kids, the cowboys…and the occasional Basset Hound for comic relief. Here is her recipe for a traditional Mexican dessert, Tres Leches (3 milks) Cake.

Recipe by The Pioneer Woman

INGREDIENTS

1 cup All-purpose Flour
1-1/2 teaspoon Baking Powder
1/4 teaspoon Salt
5 whole Eggs
1 cup Sugar, Divided
1 teaspoon Vanilla
1/3 cup Milk
1 can Evaporated Milk
1 can Sweetened, Condensed Milk
1/4 cup Heavy Cream

FOR THE ICING

1 pint Heavy Cream, For Whipping
3 Tablespoons Sugar

PREPARATION INSTRUCTIONS

Preheat oven to 350 degrees. Spray a 9 x 13 inch pan liberally until coated.
Combine flour, baking powder, and salt in a large bowl. Separate eggs.
Beat egg yolks with 3/4 cup sugar on high speed until yolks are pale yellow. Stir in milk and vanilla. Pour egg yolk mixture over the flour mixture and stir very gently until combined.
Beat egg whites on high speed until soft peaks form. With the mixer on, pour in remaining 1/4 cup sugar and beat until egg whites are stiff but not dry.
Fold egg white mixture into the batter very gently until just combined. Pour into prepared pan and spread to even out the surface.
Bake for 35 to 45 minutes or until a toothpick comes out clean. Turn cake out onto a rimmed platter and allow to cool.
Combine condensed milk, evaporated milk, and heavy cream in a small pitcher. When cake is cool, pierce the surface with a fork several times. Slowly drizzle all but about 1 cup of the milk mixture—try to get as much around the edges of the cake as you can.
Allow the cake to absorb the milk mixture for 30 minutes. To ice the cake, whip 1 pint heavy cream with 3 tablespoons of sugar until thick and spreadable.
Spread over the surface of the cake.

The Chaplet of the Devine Mercy

How to Pray the Devine Mercy

An ancient Christian writer wrote that, "of all divine things, the most divine is to share with God in the saving of souls." Interestingly, God and Souls was the motto of St. Maria Faustina Kowalska, whose revelations in the 1930s led to the modern Divine Mercy movement. Our Lord asked St. Faustina to pray and offer the Chaplet of The Divine Mercy for sinners and the dying, saying:

Pray as much as you can for the dying. By your entreaties [that is, insistent prayers], obtain for them trust in My mercy, because they have most need of trust, and have it the least. Be assured that the grace of eternal salvation for certain souls in their final moment depends on your prayer. You know the whole abyss of My mercy, so draw upon it for yourself and especially for poor sinners. Sooner would heaven and earth turn into nothingness than would My mercy not embrace a trusting soul." (Diary of St. Faustina, 1777)

Saint Faustina was often given the grace to know when a certain dying person desired or needed prayer; she would be alerted to the moment, by her Guardian Angel or by our Lord Himself. At those times she would pray until she no longer felt the need to pray, or a sense of peace came upon her, or she learned that the person had died, or heard the soul say, "Thank You!" She wrote: "Oh, dying souls are in such great need of prayer! O Jesus, inspire souls to pray often for the dying" (Diary, 1015).

One of the best means of assisting the dying is the one that Jesus revealed to St. Faustina and insisted that she use often, even continuously: The Chaplet of The Divine Mercy. Jesus said, "My daughter, encourage souls to say the chaplet which I have given to you. It pleases Me to grant everything they ask of Me by saying the chaplet. ... Write that when they say this chaplet in the presence of the dying, I will stand between My Father and the dying person, not as the just Judge but as the merciful Savior" (Diary, 1541).

Earlier, our Lord said to her, "At the hour of their death, I defend as My own glory every soul that will say this chaplet; or when others say it for a dying person, the indulgence is the same" (Diary, 811).

What if the person prays from a distance? Saint Faustina had a love for the sick and dying, and she prayed for them with great fervor. The following experiences recorded in her Diary make it clear that one does not have to be at the bedside physically. She wrote, "It sometimes happens that the dying person is in the second or third building away, yet for the spirit, space does not exist. It sometimes happens that I know about a death occurring several hundred kilometers away. This has happened several times with regard to my family and relatives and also sisters in religion, and even souls whom I have not known during their lifetime" (Diary, 835).

Our Lord said to St. Faustina, "'My daughter, help Me to save a certain dying sinner. Say the chaplet that I have taught you for him.' When I began to say the chaplet, I saw the man dying in the midst of terrible torment and struggle. His Guardian Angel was defending him, but he was, as it were, powerless against the enormity of the soul's misery. A multitude of devils was waiting for the soul. But while I was saying the chaplet, I saw Jesus just as He is depicted in the image. The rays which issued from Jesus' Heart enveloped the sick man, and the powers of darkness fled in panic. The sick man peacefully breathed his last. When I came to myself, I understood how very important the chaplet was for the dying. It appeases the anger of God" (Diary, 1565).
